Tray-roast roots and bangers

Roasting a bunch of good things together in the oven is such an easy way to make a tasty, healthy meal.

Serves 2


1 large or 2 medium carrots, peeled and cut into bite-sized chunks

1 large potato, about 250g, scrubbed but not peeled, cut into small wedges

1 large or 2 small onions, cut into wedges

sunflower or other cooking oil

4 sausages

1 eating apple, quartered, cored and cut into chunks (skin on)

8-10 Brussels sprouts, trimmed

grainy mustard, to serve (optional)

salt and pepper


Preheat the oven to 190C/gas 5 (fan 170-180C).

Put the pieces of carrot, potato and onion into a large roasting tray. Trickle over a little oil, add some salt and pepper and toss together. Roast for 15 minutes.

Take the dish out of the oven. Give the carrot, potato and onion a bit of a stir, then push them towards the sides of the dish to make room for the sausages. Put the sausages into the middle of the tray.

Add the apple chunks and sprouts, dotting them over the other veg. Give the dish another tiny trickle of oil, making sure the bangers, apples and sprouts all get a bit. Add another shake of salt and pepper.

Return the dish to the oven for 15-20 minutes, or until the sausages are cooked through and the veg has some nice golden brown bits. Serve straight away - with a spoonful of grainy mustard on the side if you like.
