Pasta with cabbage and bacon

A great way to eat cabbage, this very simple recipe uses just a smattering of crispy bacon to season the pasta and veg. Plus, wholewheat pasta is higher in fibre and an easy switch which doesn't compromise the flavour.

Serves 4


300g wholewheat or spelt pasta, such as penne

half a medium Savoy or other green cabbage, halved again, core removed, sliced

1 tbsp vegetable oil3-4 rashers of bacon, roughly chopped

salt and pepper


Bring a large pan of water to the boil, add a little salt and then tip in the pasta. Cook for about 3 minutes less than the time suggested on the pack, then add the sliced cabbage, stirring it into the water with the pasta, and cook for another 3 minutes or so, until the pasta is done.

While the pasta is cooking, heat the oil in a frying pan over a medium heat. Add the chopped bacon and fry it for 3 minutes, or until crispy.

Drain the pasta and cabbage then tip them back into their hot saucepan. Scrape in the hot bacon, and stir well. 

Serve, sprinkled with some black pepper.
